1. Cook quinoa according to package directions. Set aside to cool slightly.
2. While quinoa is cooking, combine kale, cucumber, onion, red peppers and chickpeas in a large bowl.
3. When quinoa has cooled slightly, add to bowl along with feta and toss lightly to mix. Add dressing and toss until desired level of coating is reached (you may not need all the dressing)
4. Serve immediately or store in fridge and serve cold.
